CINNAMON BAKED APPLE WITH CARAMEL DRIZZLE

Do you have a sweet tooth and also need something warming for the soul?

You have to try this! Full of sweetness and flavour, warm and perfect for winter. It really hits the spot for that sugar craving too! This really works perfectly if you just are having one of those days and need a sugar fix or have cravings for dessert. You can also make this for a breakfast option or a sweet afternoon snack!

You can add some coconut yogurt for serving if you want to go all out.

INGREDIENTS

  • Granny Smith apple

  • Cinnamon

  • All spice and/or ground cloves

  • Caramel liquid stevia

  • Sweetner - Lakanto or Xylitol

METHOD

  • Use a corer to remove the Granny Smith apple cores

  • Place the apple on a lined baking tray

  • First sprinkle heaps of cinnamon in the core

  • Then sprinkle sweetner liberally

  • Option to stuff saltana’s in the core (I don’t for myself but you can do for the kids)

  • Sprinkle more cinnamon inside and on top & more sweetener and some all spice or ground cloves and more cinnamon.

  • Then drizzle caramel flavour liquid stevia over the top.

  • Bake for about half an hour - until the apple starts to split open.

  • When serving, use a spoon to gather the caramalised liquid from under the apples and spoon it on top.

  • Option to sprinkle more sweetner and cinnamon.

Choc Chip Oat Breakfast Bar

A different way to each your oats in the morning. What a treat! These are a must try if you have a sweet tooth!

So quick and easy to make and only have 4 ingredients. They are chewy and wholesome and full of flavour. The best part is that you dont have to feel guilty having one for breakfast!

The choc chips are sugar free but you could also leave them out or substitute them with chopped up dates or apricots or dried berries.

CHOC CHIP OAT SLICE

INGREDIENTS

- 3 ripe bananas, mashed

- 3 cups rolled oats

- 1/2 cup peanut butter (we used the ridiculously delicious brand with salt)

- 1/2 cup sugar free choc chips (we use noshu brand)

METHOD

- Preheat oven to 180

- Mix all ingredients together in a bowl

- Line a square pan with baking paper and evenly press mixture into paper

- Bake for 12 minutes

- Allow to cool before cutting.

SALAD TRICKS #1: Spice Roasted Cauliflower & Lemon Tahini Dressing

We are here to help! We might make this a little series with ongoing salad tips. Because…. WE LOVE SALADS! Believe it or not - often the most delicious meals are a salad! Not the basic lettus, tuna, cucumber and tomato combo - that can get boring. Sometimes you need to put some effort in and make them delicious. It doesn’t have to be time consuming though. With ten minutes of prep time you can create some amazing ingredients to elevate your lunch for the week!

STEP 1. Bake a heap of vegetables. Make a batch so you can use the ingredients for days ahead. Some of our favourite roasted vegetable for salads are: Balsamic roasted beets, carrots, pumpkin, brocolli, onions and one of the best = Cauliflower. Below is a delicious trick for making the most delicious roasted cauliflower.

Step 2. Have a simple, delicious and healthy dressing ready to go! Whip this up in minutes with only a few nutritious ingredients. Store in the fridge to use over the week. Drizzle on top of your salads.

The roast veg and this dressing will elevate your everyday salads. You will be craving salad for lunch after doing it this way!

Spice Roasted Cauliflower

Lay out the cauliflower florets on a tray and sprinkle with Sweet paprika, Cumin, Salt and Garlic powder. Then spray with olive oil and bake for 1 hour on 180. Simple!

Lemon Tahini Dressing

Simple blend together the following ingredients:

  • 1/2 cup of water

  • 2 Tbsp of olive oil

  • 2 Tbsp lemon juice

  • 1/4 cup tahini

  • 1/2 tsp crushed garlic

  • Pinch of salt

Salmon Quiche Recipe

It’s nice to find different ways to eat salmon, and also nice to be creative with a quiche.

A quiche is a super easy mid week meal. It’s handy because you can prepare it the night before and come home after a busy day and dinner is ready! Either heat it up or have it cold, by itself or with a little side salad. Then with leftovers, you also have lunch sorted for the following day! Win-win.

Salmon is so delicious with dill. Leek is also a delicious alternative to onion in a quiche.

I used puff pastry as a base in the quiche pictured, but you don’t need to use pastry. You can simply spray a baking pan with olive oil and bake the quiche naked without pastry for a healthier gluten-free option.

INGREDIENTS

- 2 sheets puff pastry (optional)

- 300g fresh salmon, cubed

- 6 eggs

- 1 leek, sautéed

- 1/3 cup dill, roughly chopped

- 2/3 cup sour cream or lite cream

- 1 cup shredded cheese

- 2 Tbsp plain flour

- 1 tsp baking powder

- salt & pepper

METHOD

- Preheat oven 180

- Sauté leek

- Spray a large cake tin with olive oil (and option to line pan with 2 sheets of puff pastry).

- Mix everything in a bowl.

- Pour into pastry tin and bake for 45min.

So easy! Enjoy!

Fresh Easy Lite Salad

We are always trying to find new salad inspo! We all have our go-to favourites, but it’s nice to have new ideas sometimes to mix things up and keep the salad game fresh.

This one is a very simple salad. Its crunchy and fresh and can be dressed different ways. You could also add anything else you wish. But sometimes it nice to keep things simple.

Pair this one with any BBQ’d meats or seafood. Or even just add tuna for an on-the-go option.

Simple Fresh Salad

INGREDIENTS

(Layer in this order)

  • 1 cos lettus, cut in half and spread on the bottom of the bowl

  • 1 zucchini, shaved into strips

  • 6 radish, cut into match sticks

  • 1/2 Lebanese cucumber, cut into half circles

  • 1/4 cup mint leaves, finely chopped

DRESSING

You can make a basil pesto, as pictured, and mix it through the salad. Recipe for basil pesto is HERE.

Alternatively, you can make a basic yummy dressing:

  • 1.5 Tbsp olive oil

  • 1 Tbsp red wine vinegar

  • 2 tsp melted honey

  • 1 tsp dijon mustard

  • 1 tsp seeded mustard

  • salt & pepper
